Vegetarian Suggestions Needed

I've been asked to recommend restaurants for good vegetarian meals in all 4 parks. I'm not a vegetarian so never really paid attention. Does anyone have some ideas?

I am a lacto-ovo vegetarian (meaning I eat eggs and dairy products) and have found WDW to be one of the most accommodating vegetarian-friendly places I have ever been.

Most will have no trouble eating there! If they are a vegan, obviously the challenge will be a little bit more difficult, but can still be done.
