Tinkerbell, I am a vegetarian and have never had a problem finding good eats at Universal. The Islands at RPR had some nice veggie (I think even vegan) options. And the PBH restaurants are mostly that good old vegetarian stand-by, Italian food. I've never eaten at the HRH. Within the parks, the sit-down restaurants all have at least one or two good veggie options. I especially liked Mythos (though I think there was only one veggie entree), Confisco Grille, and Lombards. With counter service you will probably want to look at the menu first or get stuck eating macaroni and cheese with french fries. The Enchanted Oak was my favorite counter service place. I have that book that was mentioned and I would say it's a little too out of date to be worth the price. I think you'd get more use out of looking up menus online. Enjoy your trip!
