Vegans and signature restaurants: Are there choices?

I'm noticing from various websites that menus don't even seem to include a vegetarian entree at the better restaurants.

Do they just do something special on the spot or are the menus not showing anything on the websites, but indeed there are selections on the menus? Or are you out of luck and you must order side dishes or whatever?

I'm especially interested in Bistro de Paris and Fulton's Crab House.

Vegans would likely have to ask for a special preparation. And they would certainly have to ask, because a vegetarian dish is not necessarily vegan. The restaurants I've observed, if the vegan requests no cross-contamination, their food preparation will be treated the same way allergies are treated.

Jiko seems to be the best option for vegans. According to Disney World's official website, Jiko has a vegan menu with a variety of options (at least compared to the other signatures).

I'm a vegetarian and have never had any problem finding something delicious on most menus. You can always call Disney and have "vegan" added to all your ADRs. When we went to Hoop-de-do, a restaurant not vegetarian friendly from the exterior, a chef came and spoke to me before dinner, and I was brought pasta made from scratch along with grilled vegetables with balsamic vinegar. Everyone at the table agreed that I had the best meal!

So you can alway ask to speak to a chef and they certainly try to accommodate you.
