Variations on the Chicken in Foil recipe

A few years ago, I gave Buckalew a recipe that I have changed a little. I thought I would post it here for something different.

Use one serving of boneless chicken per package. Each person will get their own. You can use bone in chicken for more flavor, it just takes a little longer.

I marinade the chicken with package marinades. You can pick from many that are your taste. This keeps the chicken moist.

I layer one serving piece of chicken, sliced red potatoes, sliced carrots, sliced onion, one tablespoon of butter (more if you prefer), and salt and pepper to taste.

I cook it on the grill on medium to low heat for 20 to 25 minutes if the chicken is completely defrosted. (longer for frozen and bone in chicken.

A whole meal in one package!

wow! that sounds great...have you ever tried it in the oven?
 
No, I haven't tried the oven, but I'm sure it would be fine. Would probably take a bit longer. I would go with 350º for around 40 minutes. Longer with bone in.

We don't have air conditioning, so my grill is my main oven in the summer! Especially this one!:rolleyes:

We do something similar with fish. We make the foil packets and add fish and vegis then grill them. Yummy!
