Sleepy Hollow Mickey waffle with strawberries and cream (or just regular mickey waffle) available for a snack credit. Lots of good options at Les Halles at EPCOT france pavilion, specifically the roule de lard et fromage.

Also, if you care about maximizing your credits, pay attention to the prices. Many snack credits for breakfast are things like muffins, bagels, etc, at $3.50 a piece. Not a great value at all (of course if you got free dining maybe you don't overly care).
At POFQ a biscuit with gravy counts at a snack credit so I would have that as I don't have a sweet tooth. Felt a bit cheated though when we walked across to POR one morning and they had 2 biscuits with gravy for a snack credit
We used our snack credits for breakfast at the Kringla bakery in Epcot's Norway after ropedropping FEA, and it was AWESOME. They open right when the park does, (not on a delay like much of world showcase). Almost everything there was a snack credit.
Disney Springs is a challenge because most places don't open until 10am at the earliest. Aside from Starbucks, Wolfgang Puck Express serves breakfast and they may have sandwiches or pastries you can use a snack credit on, but I'm not certain. They definitely have quick service credit breakfast options, however.
