I have been a Delta FF memeber since the 80s, and it has never been harder to get FF tix for the minimum 25,000 miles, at least for a direct flight. In my experience, the direct flights disappear from the cheaper category soon after they come out at 331 days. Occasionally they add new seats if they are having trouble selling them on the dates in question, but as a rule, book direct FF tix at the 331 day mark.
If you have not already signed up to use Delta's on-line site with a PIN, get signed up and punch in hypothetical trips and see if there are any FF tix available for trips that might appeal to you.
If, however, you don't mind taking a connecting flight, and you plan a little bit in advance, you should be able to do it without much difficulty. Since the OP is in a Delta hub she might have a better chance at something direct. She'll just need to play around on the website for a while and see what's out there for 25,000 SkyMiles.
Actually, I was playing around on the Delta site as I was writing this and saw a couple of direct SkySaver tix from SLC to MCO for late July. Cool. Good luck with the search.
