Using Credit Cards . . .

Yes. Not all of the stands take them, though. In general, the stands that don't take credit cards are cash-only - they can't take room charges or DDP, either.
 
The vast majority of places in WDW take credit cards. I have used many of them. I have not spent more than $10 in one day in a park in cash for the two of us. There are a few stands that do take cash only, so you may want to take a small amount of cash.
 
Disney is very good at separating you from your money.

I wouldn't be suprised at all if you went to a cash-only stand and pulled out a credit card, that the Big Mouse himself would come running up with a manual card scanner. :)
