Can credit cards be used in the parks at the counter service places?

Yes. Not all of the stands take them, though. In general, the stands that don't take credit cards are cash-only - they can't take room charges or DDP, either.

The vast majority of places in WDW take credit cards. I have used many of them. I have not spent more than $10 in one day in a park in cash for the two of us. There are a few stands that do take cash only, so you may want to take a small amount of cash.

Disney is very good at separating you from your money.

I wouldn't be suprised at all if you went to a cash-only stand and pulled out a credit card, that the Big Mouse himself would come running up with a manual card scanner.
