What’s the earliest departure from MCO you would take? Is 11:52 OK?

OK? Yes. Leaving MCO at that time will get you to the port and probably onboard around 1pm. Whether that is “good” may depend on your plans onboard. For the most part crowds should be gone from the terminal and it’s likely open boarding and you can board immediately or with minimal wait. Less time to lug stuff around before staterooms are available.

I am sorry. I mean after the cruise. Is that an OK time for flight home?

I think it's fine. The cruise line recommends flights right around that time. I can't remember if they suggest flights after 11 or 12. I'm sure it's on the website or in the reservation somewhere.

We recently had a trip and our return flight was 1120am (DCL recommends 1115am as the absolute earliest). We arrived at the airport with enough time hang out at the lounge in terminal C, eat breakfast and do a little shopping before we had to walk over to our gate.

I was worried (this being our first time) but we got there in plenty of time. At the port once a bus fills up they leave so there's a steady flow of them.
