Hi All,
Im trying to perfect making little sponge cakes to decorate - but they keep burning!!!
Ive reduced heat to gas mark 4,but the bottoms burn and the middles are still raw!!!

Any suggestions?

Thanks,
Lynn

Oh no lYNN. I use a fail safe Nigella recipe that makes fairy cakes in muffin sized cases. You then top them with all sorts of fancy icings and decorations. PM me if you want me to send it to you and then you can be a domestic goddess :thumbsup2

your oven is too hot.. reduce it to a 3 and keep a close eye on them -

This is the method I use which works well:

weigh two eggs then whisk them together.
use the equivalent weight of butter, sugar and flour - make sure the butter is room temperature.
cream the butter and sugar together.
add the flour a bit at a time with some of the egg, continue to do this until all the flour and eggs are used.
put approx. two teaspoons of mixture in each cake case - make sure you put enough in or they will look like biscuits when cooked!
cook at gas mark 2/3 (200 degrees) for approx 10 minutes but check after 7 if making small cakes.
use a thin skewer to check they're cooked inside, and hopefully golden brown on top.
leave to cool, decorate then eat the lot before anyone else does!!

hope this works!
