We have 1 day - 2 park tickets and plan to go on Sunday, Sept 9. This will be our third trip to US/IOA and wonder if it would be totally crazy to hit US first to catch Despicable Me and then leave immediately and go to IOA for FJ .. spend rest of the morning at IOA and then return to US.

There will be just two adults and one fast walking 10 year old.

Sunday is a great day to go. A Sunday in September should be even better. You should be able to do stuff in pretty much whatever order you like. It is only a couple of minutes walk between the two parks, so not crazy at all.
