UPH versus PHP - So Confused!

I've read and read - and only become more confused about Ultimate Park Hopper tickets and length of stay. When we arrive at BCV, it will be on a Sunday in the late afternoon. We'll have 3 full days (M,T,W) before we depart WDW Thursday AM for the Cruise.

Will I be able to purchase a 3 day UPH? Or will I be forced to purchase tickets for Sunday and Thursday - knowing full well that I won't need them?

I'd really appreciate any input people can provide. We'll be all over the place - 2 kids under 5 and my mother (who will do evening babysitting) - so moving around easily is a big selling feature for us.

If you purchase the UPH when you check in, most likely the CM will be able to take off at least one of the days. Some CM's have taken off both arrival and departure dates, but it's not always guaranteed.

Are you sure you just don't want 3 day park hopper passes? I used to always get UPH, but this trip last week I bought parkhoppers and was very pleased with them! I even came home with an extra day on them plus two visits to waterparks (the "plus" feature). As a DVC'er, I figured I wouldn't use the parks each day and I was right. These passes never expire, unlike the UPH's...another benefit to regular parkhoppers.

I wouldn't get the UPH ones at the resorts. We got the 5 day park hopper and only used 2 days. We are using 2 more in September. We had planned to use 3 of them in March but wanted a 'down' day, so we didn't go to the parks that day. With the UPH, you would feel you had to go (since you paid for them, or you lose that day).

Knowing that the passes are good anytime means that you just use the days you want, and save the others for another trip.
