We are on free dining and I have a question concerning upgrading of my kids to adults on the dining plan. We decided to upgraded my twins simply because the kids counter service options most of the time are not appealing to them. Now I'm wondering if I can pay oop for a few table service meals for them and use the credits for an extra breakfast. Anyone have any experience or done this?

You can pay out of pocket for kids meals anywhere that you order off a menu. They will (most likely) be treated as adults at all fixed-price (buffet/show/family style) meals.
