We have decided to go to Disney the last week in March. I have some 2 day MYW tickets left from a previous package that we didn't use (had YES tickets). These tickets have not been used yet. My mom is in Florida right now, if I mail them to her, could she take them to guest relations in Downtown Disney and upgrade them to 5 day hoppers, so we can make our FP+ selections for our entire 5 days? What happens if I add them to MDE now, will I only get to choose FP for 2 days?

You could do this, but with the method you propose you'll lose a lot of money on each ticket. These tickets are sold by Disney Ticketing at wholesale to the Disney resorts. What Disney originally sold them for wholesale is what they're worth if you upgrade before using them to enter one of the theme parks. But, if the tickets were used first (when you arrive in March) and then upgraded, you would receive current Disney gate price credit for each ticket towards your upgrade cost.

You have to decide which is most important -- the FP+ for 3 extra days, or getting maximum credit for your old tickets. You could also choose to buy new 5-day PH tickets for just this trip and keep the 2-day tickets for another future trip. Or even sell/trade them.

I didn't think bridging applied to tickets originally sold by Disney, even as a package.

Resorts tickets are actually sold (internally) by Disney to the Disney Resort division at a discount, so that the resorts can offer "deals" and "incentives" on tickets.

So, yes, Resort Package tickets are considered "discounted" tickets and CAN be price bridged.

BTW, the same situation applies to tickets sold at the Disney Stores.
