At several places we found they have a binder where you order (Leaky Cauldron, etc.). It has separate pages for each of the common eight allergies. Each page tells you dishes you shouldn't order and which you can order (sometimes with caveats such as no sauce). Each allergy order is tagged to prevent cross contamination as well. Each food service worker that delivered food to us made a point of saying which dish was the allergen-free order. Good training.
I like plcking dishes, as opposed to checking an ingredient list. It felt like vacation.
At Cabana Bay's food court, I suspect they trained all the workers to steer you toward their gluten-free options when you ask about nuts, saying they were safe for both. Persevere and a chef will come help you customize a dish as needed.
At Ben & Jerry's in Universal Studios, they are trained as well, and will get new boxes of ice cream from the back if needed and fresh scoopers.
All in all, we were pleased with Universal's handling of the problem.
