That would depend on what you enjoy. I personally don't consider it a must do. They have Margaritaville which I enjoy very much actually. They have some clubs which I have never been to because I am not a club person. If you enjoy clubs then it might be fun to go check them out. They also have Emerils which again no idea how good that is as I am a picky eater and I probably wouldnt enjoy that food. I think only reason you would absolutely HAVE to do it is if you enjoy club hoping and want to check them out at citywalk.
For night life, I think this is one thing where Universal outdoes Disney. More so when Pleasure Island shuts down in its current form. There is a great selection of restaurants. There are a number of clubs, we wouldn't go to them any more, but we always enjoy City Walk. If you do go, go after 6:00 p.m. as parking will be free.

We go every year as we always have dinner at Emeril's--usually our night of arrival in Florida (this year we are doing it at the end of our Disney trip on the way to our stay in Daytona Beach). There are several restaurants, some nice shops and some fun shops, Dippin Dots, Starbucks, movie theater, etc.
I would go hands down for just the food at Latin Quarter! Arroz con Pollo is fabulous and so is everything else! You would be losing out big time if you missed out on it1
We almost ALWAYS do a night there eating at either Hard Rock or Margaritaville. Some ties there are activities going on too, bands and such. I don't care much for US/IOA compared to WDW but I too think City Walk is equal or better than DTD.
City Walk is fantastic..great place to spend some time, have a wonderful meal, etc. You can also hop the boat and check out the wonderful resorts easily!

We usually do this. We are Hard Rock pin collectors. We hop on the boat to the Hard Rock hotel and buy some pins, and then we head to the Cafe. Didn't eat there the last time though because they changed their menu and removed our favorite item from it. We ended up cooking in our timeshare unit and I developed a new recipe for tortellini in alfredo sauce that is awesome, better and cheaper than what we would have ate at HRC.
I've taken my kids all the time to eat. We usually finish up around 9 pm or so and the clubbing people are just showing up. If you are eating dinner, I DONT think you get charged the cover.
