weighing up if I should get a 3-Park Preferred Pass or the Seasonal Pass again.

I can't find on the website what the actual 10% off for dining is. It just says "dining discounts"
I need to work out if the cost difference will be worth it for us over our trip or not, I'm also assuming that I can use the discount for my whole family like I used to many years ago if I purchase all the food in one transaction ??

It's 10% off your food & non-alcoholic beverage purchases at pretty much anywhere on property - parks, hotels, & CityWalk (I think there are maybe 1-2 exceptions). Even butterbeer from the carts is included, and the food tents at HHN/Mardi Gras. No minimum or maximum. Very easy.

Yes, if it's on one check it's all covered by the one AP discount.

It's also 10% off all merchandise resortwide, and the Universal store at MCO too. Again there are a very few exceptions but it's really nearly everything.

Are you going during Mardi Gras? Its 10% the food at the booths as well.

How about if you pick up the no annual fee credit card for the 10% discount and get the seasonal pass?

Because I'm not from the USA so can't get that card sadly.

I'm going to be there May 3-16, still deciding if we will all get AP's and hope to get into Epic for a day or just get 1 AP and get the UK 14 day tickets for the rest of my party.
We are at WDW 16-29, so hoping to see Epic for 1 day while we are there, I think with AP's we will have a better chance. But it's almost $1K more expensive to get the AP's than the UK tickets.
