Unique dining experiences?

Considering flying down for a quick trip in Feb. I've seen on many dining reviews special dining events, like some kind of amazing french wine/food event during the day at Monsieur Paul. Where do you find out about such events? Am I just missing out totally on something? I know the places we like, but some of these events look like foodie heaven. I have done some at Food & Wine. Any directions on where to find such info, would be appreciated. Also, do they sell out far in advance? I consult, so 180 days out is never going to be open to me, so if its one of those things, its ok if I should just give up.
 
To make that rambling a *bit* more precise, looking for non-dessert, but really unique culinary adventures. I know they're out there, but only people smarter than I am apparently can find them. I know about Dine with an Imagineer and the AK food/backstage experiences, I'm looking for more culinary focused experiences. And yeah, I'd love to do V&A Chef's Table, I figure I'll never get it due to the relatively short planning I do for such trips.

For time, click on "Lunch" (or whichever meal you prefer, rather than putting a specific time)
Click on "Dining Experience"
Click on "Dining Events" (and you can also click Unique/Themed dining)

That should give you a list of what is available.

Thank you! I should have been able to get that on my own. Too many years of just going to the places I want and seeing what latish reservations are available.
 

How about the monorail dine-around thing? Sounds exactly like what you're describing.

I just looked at that, and it is totally up my alley. I also loved the shortlived after hours dining/drinking thing they had a few restaurants in Epcot, only did it once and never heard about it again. Sad, it was fun.
