Only if you are staying on DVC points or booking with an Annual Passholder package.

The dining plan is part of a package which must include park tickets with these being the only exceptions.

I think you can still get the DDP as long as you buy a 1 day MYW base ticket. We have done this before and it actually worked out to our benefit. We used our tickets from Undercover Tourist on that trip and saved the 1day MYW ticket for the next trip since it didn't expire. Just be sure you don't throw away your key to the kingdom card because your park ticket will be loaded on it.
 
Unless you are an Annual Passholder, DVC Member staying on points, or Armed Forces you must purchase at least a one day ticket for each member of the party from Disney to get dining (and at least a two day ticket if it is "free" dining).

There is nothing to stop you from buying and using tickets from UCT, but you either have to save the Disney tickets for a future trip or just figure that you are overspending.
