Uber of Lyft from MCO to Disney resort

OTOH, as I understand it, the latest TOS basically says Uber can charge whatever they want, as long as they quote it in advance. Fares do not have to be tied to driver pay rates or current demand.

As a practical matter, though, I see pretty consistent pricing in the few airport pickups that I stumble into.

I think readers here can be pretty confident with the estimates given by the companies' apps or Ride Guru. I think the actual price will be pretty close to those estimates.

Yes.

The challenge will be getting an XL with a car seat. If you are going to be using Uber regularly during your stay, you should consider bringing your own car seat.
 

Do they unload them pretty quickly off the plane?
Too many variables to give you a reliable answer.
Weather plays a significant factor, as does airline.
We find Delta and American are both relatively quick.
Southwest as slow as molasses.
But none of them can unload and transport them during a thunderstorm so that can throw a wrench into any timing.

Maybe.
We've had 1 XL vehicle arrive that could NOT fit our family of 4 with 4 suitcases, and 4 carry on bags. The driver left and we had to request another vehicle. (we did not incur any cancellation charges) This has only happened once in all of our rides but it was a vehicle that is classified as an XL so it can happen.
In addition, we've had many rides back to the airport in XL vehicles that were totally filled with 4 suitcases, would not have fit 1 more suitcase.
So watch the vehicle size that accepts the ride. 100% of them will not work. At least not in my experience.

I know my Caravan will fit so I guess I cross fingers for that? We are doing Uber instead of DME because we have dinner reservations 2.5 hours after we land, and I do not want to chance it. I also could book a shuttle but this is like, less than half the price.

That will help you gauge the size for sure. When you get matched with a vehicle it will tell you the make/model. You can guestimate the size based on your Caravan and if the vehicle you get is smaller or larger and go from there.
 
Get all the full-size luggage in the XL first. Then if you can't fit everyone and all the carry-ons, you can split up & get a 2nd UberX for whatever/whomever doesn't fit. You would need a 2nd account and phone to order a 2nd car, or you could order 1 Uber & 1 Lyft.

I always load ALL the luggage in my car, because I know the unique features of my car, how to stow the most stuff and where the various passengers are going to sit.

The Biggest load (in more ways than one) I've every had was five large women who were going on a 7 day cruise, and were NOT going to be under-dressed! I fit them all in, but it was quite a challenge.

The first key with my vehicle is to figure out where everyone is going to sit, and that is dictated by the luggage, not the passengers. In my car (Buick Enclave) sometimes I have to seat one rider first in the 40% part of the third row and then load the luggage around them using the 60% part. (That's for 4 people with a LOT of luggage.) When we get to dropoff, I unload the luggage first and rider #4 last.

Then, as Joel says, you load the biggest bags first. If you're really cramped, leaving the smaller bags for last usually works. Leaving big bags last does NOT.
 
We will have 2 large suitcases, 3 smaller cases for the kids, and just back pack carry on bags. I made the mistake of bringing too many bags last time and with 7 people I somehow ended up carrying 5 bags.

The kids packs can go by their feet, husband in front seat. The rest of us we can squeeze, All XL should have at least 5 plus driver seat right??

All XL's have to have driver + six seatbelts, so there will be plenty of seating. You'd put DH up front, you in the second row, 2 y/o in car seat also in the second row, and the two 7 year-olds in the 60% portion of the third row. (Florida law says all persons younger than 18 must have seatbelts fastened. There is some question whether that requirement applies for rideshare, but you want your kids safe in any event.)

The two large suitcases should go on the folded-down portion of the 3rd row, and the three smaller suitcases should go behind the third row. Other items can go in the space between the second row seats, behind the 3rd row, on top of the large suitcases, and at passengers feet.

You should be fine.
