Wow, this sounds like a fun trip! 
Can't wait to hear all about it! AKL is my favorite resort so a thumbs up for that. I also give another thumbs up for Yak & Yeti. Now I'm going to give you a GAZILLION thumbs up for Sanaa! That is my favorite restaurant in Disney. It was also my first. The food there is fantastic. It is very similar to Yak & Yeti but just better. It isn't a hugely populated restaurant so it is very quiet and the seating is awesome. And depending on where your seated, you get a view of the savannah! 
I recommend you try the salmon. I had this salmon special there when I was there and it was to die for. I'm not sure if there is anything similar on the menu, but definitely look for anything related to salmon 
I'll also add that you definitely made a good choice on the California Grill Wishes ADR. Well... it looks like you have two awesome trips put together so have fun!
