I have several old parkhoppers with "stuff" left on them. Is there any way, besides standing at a park gate, to find out what exactly is left on them before I leave my house?

Also, I have several plus features left on these old parkhoppers. I know that plus features didn't used to include Disney Quest. Now, however, with Magic Your Way tickets, Disney Quest is included. Is there any chance that my old plus features will include Disney Quest?

Nope. Gotta be done at Disney World at Guest Service, not the park gate.

Again, no. They're only good for what you could use them for before the MYW tickets came out.

You will want to find out what is left on each pass on your first day before entering any park.

Normally it is best to use up old tickets as-is, but not if you need to buy a new ticket with less then ten days to finish your vacation with.

You almost cannot go wrong buying a ten day non-expiring pass, but if you are going to be there for ten days, get an expiring pass or an annual pass and save the old passes for the future.
