OP I suggest pricing out options on the Disney website, you can then see alternatives and photos etc at the same time.
 
id book a room at a value resort. ASSp, ASMu, ASMo tend to be a little cheaper than Pop and AoA-LM. Theres not likely to be discounts at March break time, but you could try!

Skip the dining plan and just pay out of pocket for what you want (so you dont end up paying for a dessert with every meal etc). Pretty much every dining plan comparison thats ever been run shows that its just about a break even, so its more like pre paying for food than actually saving money on food. Especially if youre not big foodies.

Dont get park hoppers, just do one park per day.

We've done the above several times to save money and it works out fine!
 
everyone really gave you some excellent advice. i just wanted to mention earl of sandwich at downtown disney. their food is awesome and only 5.99 for a delicious sandwich. pollo campero has a meal deal for 8.49. you can also get large pizzas at the food for court for reasonable $$$. another way to save money is groupon. there are deals there where you can get 50 % off your meals at orlando restaurants. restaurant.com also offers gift certificates for restaurants that will save you $$. websites like swagbucks and mypoints offer giftcards for rainforest cafe for reading emails, doing surveys etc...i got a $100 gift card for rainforest cafe for doing this.
