I recently moved to Kissimmee, FL. A friend up north is coming to visit the second weekend in September. We will have one day only to visit the parks. We will have park hoppers and plan on open to close. My question is: what are your suggestions for what not to miss? What attractions have a different feel without kids?

Also my husband and kids plan on taking my friend out for dinner and we'd like to take her someplace fun: not IN a park but possibly a resort. Any suggestions?

RNRC, TOT, TSM at DHS. BTMRR, SM and TTA, and Wishes at MK. Soarin, TT (if open) and a stroll around the World Showcase at Epcot. EE at AK. It is fun to tour with adults only, the stress level is so much lower. Don't miss any of your favorite attractions though, they will still be fun without children.
My suggestion for a meal outside the park would be Kona. That way you can take a ride on the monorail too if you would like. I also love visiting WL and AKL, so you may want to check out a restaurant at one of those resorts. Beaches and Cream is also one of our favorites. Have fun. I'm sure now that you live so close you will have many friends that would love to spend some time with you at WDW.:goodvibes
