Bake potatoes (that have been rubbed with oil, salt and pepper if you want extra crispy skin) for 1 hour. Make sure you've poked holes in them, or you'll spend all night cleaning your oven.
Take them out and let them rest, cut a piece off the top and take out the pulp, leaving about a 1/4 inch potato inside. Mash the pulp with butter, cheese, and what ever else you want (i use basil, goat cheese, walnuts, etc. ) stuff it back in the potato and sprinkle with cheese on top. Bake for about 20-30 minutes more at 350.
