We are going tomorrow morning, yay! and I was just looking at a menu for Tutto Italia's and saw this item I hadn't seen or heard of before. Rigatoni Alla Carbonara - Crispy Pancetta, Parmesan cheese, Eggs cream sauce. Has anyone tried this dish? Not sure what it is but interested to find out - what is pancetta, it's ham, right? and the Egg cream sauce? This is all on a pasta, right? Anybody out there who can help me out with this? Thanks in advance! :santa:

Sorry I can't help you, for me it is Lasagna every time.:worship:

Here is Wikipedia's listing for Carbonara http://en.wikipedia.org/wiki/Carbonara

Its like a white sauce made with eggs and cheese. Its like a thinner alfredo with more butter.

Pancetta is the same cut of meat as bacon just unsmoked.

If I see it on a menu I would more likely get it over anything else.

Yeah, that's what I usually get! It's yummy! But, thought about getting something different maybe!

Hmmm, well love alfredo sauce, so that should be good. And bacon is one of my absolute favorite things! That's a good recommendation!

Thanks dissers! Anyone else? It's on the newest posted menu at allears from Oct 2011. Don't recall seeing it there before but I may have missed it. Mmmm, getting hungry now!! :santa:

I don't know this particular dish, but carbonara is one of my FAVORITE things EVER! It is usually made by tossing hot pasta with raw egg yolks (no white). The hotness of the pasta and pancetta will "cook" the egg yolk so you're not eating raw eggs. It also has parmesan cheese and parsley in it. Delicious! If I see it on a menu I order it, hands down!

I do love a Carbonara sauce for my pasta when I'm in the mood for a rich, creamy sauce. Richer than the average Alfredo sauce, thanks to the eggs, and may be smoky flavoured depending on the type of bacon used. Can be served on just about any type of pasta- long or short, although I usually saw it made with spaghetti when we were in Rome. Although I love it, it is very rich and very filling, so not something I go for if I'm looking for a light meal.
