Turkey Carcass Soup

:stir:Well you know the holiday is about over when you make turkey carcass soup. Just finished making mine. But MMMMMMMMMMMM so good.

I pretty much take almost all the leftovers and throw them in the pot after cooking the carcass in water with onions, carrots and celery if I have it for an hour. I removed the meat from the bones threw it back in the soup, added stuffing, leftover squash, gravy, carrots, and 1 1/2 cups uncooked rice. Simmered for another hour stirring to keep the rice from sticking to the bottom. Now I have enough to freeze for more meals. Not to mention my DH has already dished up some now.

Another reason I always buy a very large bird. 25 lbs this year. It goes so far.:stir::stir:

peterpanlover -- I don't think most people put stuffing or even leftover squash in their soup, so you might want to think about those ingredients. We don't use gravy either b/c my DH and youngest son like it too much on leftovers. I'm not putting down your recipe poochie -- I think it's interesting, and I LOVE using up every morsel of food!

I don't actually eat the soup, but my DH says its delicious and it's pretty much free food since the actual pieces of turkey are saved for sandwiches and leftover meals. We cook our turkey on a bed of onions and celery, so I don't add any additional onion. I stew the carcass for several hours, then remove the bone. I add more celery, a few carrots, rice and whatever seasonings pop out of the cabinet -- salt, pepper, garlic, parsley, maybe a little Italian seasoning.

I agree. I simmer my turkey with garlic, salt, pepper, a little onion, salt, pepper and a few bay leaves for around 3 hours on very low heat in a big stock pot. I strain it, let the strained stuff cool, and then pick out the meat to put back in the stock. I only add in celery, carrots and noodles or rice. It is very tasty. I serve it with bread and salad.
 

I had a friend of mine's dad make a soup kinda like that, but he called it "trash can soup". It was quit tasty. I also love the name "turkey carcass soup". Both sound cool. Good luck.

We did not have too much squash left. I just chopped up the remainer of what we had left. Was not enough to change the flavor but any vegatable added to soup is good. The gravy just made it richer. Also not much stuffing was left. But the carrots, onion, and turkey were the main ingrediants.

Remember soups once you have the stock, are pretty much wide open to ones taste.
 
I saw this recipe for stuffing dumplings. Unfortunatly the only thing I have left is the carcass in the freezer. I will be making soup this week. The temps have been creeping into the 30's so its soup time!

True! I used my turkey parts to make Turkey Perlo. It was YUMMY!! Especially with the Texas Pete added to it as well:rotfl:
 
Thanks for sharing - I love a good soup recipe! I did mine in the crockpot. I found the recipe on the 365 crockpot website. This was our third year in a row making it and we love it! Turkey carcass (ours was 18.5 lbs.), 8 cups of water, 1 onion cut up, 2 celery stalks cut up, and the turkey was already seasoned from being stuffed with citrus and apples, so that was it. I let it go on low overnight and strained it into my second crockpot in the morning, pulling off the turkey (although with 10 hours of cooking it just fell off) and adding it to the stock. Then I added 1 sleeve of wild rice (Mahatma brand, I think), a chopped onion, cut up carrots, 2 Tbsp balsamic vinegar, a pinch of sage, s&p, and let it go on low 6 hours. Then I put it on high and stirred in fresh spinach until it wilted, just a few minutes. YUM!!
