I pretty much take almost all the leftovers and throw them in the pot after cooking the carcass in water with onions, carrots and celery if I have it for an hour. I removed the meat from the bones threw it back in the soup, added stuffing, leftover squash, gravy, carrots, and 1 1/2 cups uncooked rice. Simmered for another hour stirring to keep the rice from sticking to the bottom. Now I have enough to freeze for more meals. Not to mention my DH has already dished up some now.
Another reason I always buy a very large bird. 25 lbs this year. It goes so far.
