Trying to update FP selection and I'm confused. Help!

I was unsuccessful in getting a FP for 7DTR when I booked and not sure of the process as to how to look at availability (if any)

I currently have 3 selections made as of now - 10:00 / 11:00 / 12:00 for 3 different attractions. I know that I can go in and select "Change Experience" but isn't that looking at that time slot only? What about availability for the rest of the day beyond my 3 time slots? Do I literally need to cancel one of my FP in order to view the entire days availability.

No, you should see availability over the entire day. How the MDX system determines what specific times it offers is a mystery otherwise. I would try looking around for other windows but only selecting some (or even 1) of your party and see if you get different results. But don't cancel, you will have to call Disney IT to get it back.

I guess I'm not explaining properly - I currently have a 10:00 - 11:00 Buzz Lightyear reservation. I went in and selected 'change experience". At that point is it scanning all attractions with FP availability from open to close for that day - or is it looking at the 10:00 - 11:00 am time slot only?

As Mesaboy2 said, you should see availability over the entire day.

I believe, and maybe Mesaboy can back me up on this, that it will look at all times for the day that do not conflict with your other FP choices. So, it will show you the entire day if anything is available, unless those times are within your other FP choice windows. I would try changing all of them to see 7DMT availability (most others aside from Anna & Elsa can be easily rescheduled). Changes are not locked in until you finalize so you can look for times before committing to it.
