I'm wondering - the points that they have listed for Sun-Thurs - is that per day, or for those 5 days?

Except for the weekly amounts, all points are per night. The weekly points are only there as a convience as there is no points savings for 7 night stays. Also, if your stay crosses seasons, you have to add the correct points per night from each season.

yes, the point charts are all simple - just add up each point cost per night.
