Trying to decide on one dinner

I'm getting things firmed up for my 3 nights at WDW prior to a 5-night Disney Dream cruise for my birthday trip. I'm staying at Caribbean Beach (my Disney home).

July 18 is Epcot, and I'm doing the Illuminations Dining Package.

July 20 (the actual birthday) is Animal Kingdom with Up Close With Rhinos and the ROL Dessert Party (I adore ROL. I'm weird.)

July 19 I'm doing breakfast at 'Ohana with a friend and then going to MK. I already said I'm weird, and I'm one of the few who does NOT like HEA (I call it Hopefully Evermore Avoiding), so seeing it is not a priority for me. I'm trying to decide if I should do a dinner in the park and enjoy lower lines while the show is going on - I have an ADR at BOG where I've never done dinner, but I've also eaten at Skipper Canteen before and loved it and would not be opposed to eating there again. OR I could leave around 6 and head to Disney Springs for dinner at Boathouse (love it there), or Bongo's (love Cuban-style food), or Frontera Cocina. (I'm doing Raglan Road brunch after the cruise before my evening flight). BUT I'm also intrigued by Sebastian's Bistro at CBR and a quiet, earlyish night back at the resort might be nice.

Thoughts/suggestions? I am gluten-free, so the places I've selected do have allergy menus that are decent. I'm also not a fan of things that swim - occasional scallops or something like Shrimp and Grits I'm fine with. Because of the gluten-free thing, I'd rather avoid buffets as that just adds an extra layer there. And I'm not really into the idea of changing in a restroom from park-wear to signature-dress wear for someplace like Narcoossee's.

So torn!!
 
Should probably add (since it matters to some people), solo adult. I've never had any issues with anyone at a WDW restaurant, so I'm not bothered by being solo. (Well, that does enter into the buffets thing...it's kinda awkward to do that without someone left to sit at the table.)
 

Since you are staying at CBR Sebastian's sounds like a natural. Haven't eaten there yet but I'm "jonesing" to give it a try. The reviews have been quite good up and down the internet.
WDW has consistently disappointed me with it's Latin restaurants' offerings which is a total shame given the population of FL. Caribbean and Latin cuisine are foods I grew up eating so I take the dishes seriously. Even Frontera Cocina was a no return for us with DGD being the first to admit it out loud, LOL. We threw our boxed leftovers from there in the garbage which is highly unusual for us. FC does have nice drinks and appetizers though. Finally made it to Chi Town this winter and ate at Bayless' flagship; much much better food IMO.

We wuvvvvvvvvv the Boathouse and return there frequently.

We rarely eat at MK restaurants preferring to hit the nearby resorts instead. Last trip we finally made it to Geyser Point Grill and Bar and wondered how we'd missed it for so long. An easy 15-20 minute boat ride from the piers at MK and a world away from the noise of the parks. Great burgers and small plates and a lovely black cherry mule made it all worthwhile. We visited twice last trip.
 
I voted for Skipper's but it is one of my guilty pleasure places. I love the place so the girls tolerate it for one meal for me.
 
I voted Sebastian's Bistro, just because I was unaware of it, and figure you can report back with your review.
 
I voted for The Boathouse. That is one of our favorites. With their huge menu there is definitely something for everyone
 
I voted for BOG because any of the other places you should have no trouble getting in last minute as a solo if you change your mind.
 
I voted for BOG. Personally, I would want to stay in the park and ride while HEA is going on and since you've already done Skipper's, I would keep BOG.
 
Even thou I have never eaten at the Boathouse, I hear its very good.
 
I would say BOG since you haven't been there for dinner - get that Beast pic. :) If you decide to cancel it, then do Sebastians
 
I suggest Sebastian's. It will be close to "home" and would be conducive to a relaxing evening before the cruise. I tend to be a clock watcher, so I like to know I have no where else to be if I want to enjoy another cup of coffee of glass of wine before heading back to the room.
 
Like many others, I would suggest Be Our Guest, if you have not tried it before.
 
I would either go to Skippers as it good food and just fun and you already are in MK or
your ideal of Sebastian's Bistro and a quiet night back at the resort.
