Trip planning - when to go???

We are planning a trip for the holiday season for our family of 5. Our girls will be 7, 4, and 4 at the time.

I am trying to decide whether to go right after Thanksgiving or the week after. Our tentative plan is to fly into San Diego and spend a couple nights there (go to SeaWorld and the zoo). Then drive up to Anaheim for the rest of our trip where our priority will be Disneyland and California Adventure Park.

Debating between the following time periods: Nov 25-Dec 6 or Dec 2-Dec 13. Would there be any pros to either time period? Would crowd levels be about the same? My main concern is wait times for rides.

I think the crowds get bigger the closer it is to Christmas. I've read that the week after Thanksgiving is the lowest-crowd week of the holiday season. We may try it ourselves this year!
 
The Candlelight processional (not really sure what it's called) is usually the first weekend of December so you may catch some crowds if you go the week after Thanksgiving. If it were me, I would go for the 2-13 since I've heard that the first two weeks of December are less crowded than the last two weeks.
