Trip planning ??? -- add a day? what to do?

I have a semi-planned short trip in the works. Currently have a garden view room at POR checking in Friday 11/11/16 and checking out Monday 11/14/16. It is DD12 and myself. Our "plan" so far: Saturday: hang at resort, boat to DS, go shopping, ADR at RR. Sunday sleep in/go to pool, go to Poly early afternoon for Dole Whip floats, then over to MK for MVMCP. Fly home on Monday.
I have not booked airfare yet. I live in Maine and I was planning on driving to Portland (3hours away) on Thursday after school so we could fly on SW or Jet Blue on Friday morning and use ME as transport to POR. Would most likely use Uber while we are there to get around as the busses are rather unappealing.

Or we could add on Thurs night to our ressie and fly on Allegiant from Bangor (only 1 hour away) because they only offer a flight on Thursday and return Monday. I would also have to rent a car. We have flown Allegiant before and the direct flight is so hard to pass up! In light of recent, ummm, difficulties with the TSA in large airports, I am very much leaning towards this scenario. If I decide to go Thurs-Mon, what should we do with the extra day? I was only planning on the party for park time. If I have a rental car we can go shop offsite. Or maybe a water park if it is warm enough? Resort hop? Which I would LOVE to do but not sure if DD would be thrilled. I don't need to decide on airfare right away but I'm thinking I should call and add Thursday night since it is currently available. I hope this makes sense, I apologize for the rambling, any thoughts DIS-Ers?
 
Are you purposely not spending time in the parks? Yes, the MVMCP is great but you won't be able to do everything at the party, not to mention the park during the party hours for one night. Does your DD want to do that much shopping or is there any attraction/park she'd be looking forward to? If she would want to spend more time at a park I would add more time for that in.
 
Make the Monorail hotel tour into a Scavenger hunt.

Find the pressed penny machines in each hotel.

Find all the characters on the floor of the Grande F.

Find Hidden Mickey’s.
