Tried two new cookie recipes yesterday..

Mmmmmmmmmmm...good !!!!

I only made 1 batch of each, but they flew off the cooling racks so fast I'm going to have to make more.. :) Even my DD's MIL, who had dropped by to pick up our granddaughter for a sleepover, requested the recipes.. What makes that so significant is that this woman has NEVER baked cookies in her entire life - doesn't even own a cookie sheet!

The cookies were:

Ricotta Cheese Cookies

and

Coconut Creams

Both were very simple and very quick to make.. If anyone is interested in the recipes, just post your request on this thread and I'll be happy to share! :)
 
Hi C.Ann! :wave: Please share! I'm always looking for more cookie recipes. :) The Ricotta Cheese sound especially good!
 

Here you go:

Ricotta Cheese Cookies


Cream: 1 stick margarine or butter
1 and 1/2 cups of granulated sugar
1 cup Ricotta cheese
1 egg
1 teaspoon vanilla

Mix: 1/2 teaspoon baking soda
2 cups of flour
1/2 teaspoon of salt

Blend all until well mixed. (Dough may or may not be a little loose.)
Drop dough by the teaspoonful - about 1" apart - onto cookie sheet. (**This recipe came from a pen pal and she wasn't specific about greased or ungreased cookie sheets so I used non-stick cookie sheets.) Bake at 350 degrees for about 15 minutes. Watch them carefully - when you see the bottoms have browned nicely, remove from oven. Remove cookies from cookie sheets immediately and transfer to cooling racks.
**1 batch of dough made 46 cookies.

Coconut Cream Cookies

1 cup margarine or butter
6 ounces of cream cheese
1 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 egg
2 Tablespoons of milk
2 cups of flour
1/2 cup of flaked coconut

Preheat oven to 325 degrees. Cream together the first 7 ingredients until fluffy. Stir in the flour and coconut. Mix well. Drop by small teaspoonfuls onto greased (or nonstick) cookie sheets. Bake for 20 minutes. Remove cookies from cookie sheets to cooling racks immediately.
***1 batch of dough made 51 small cookies.
