I have a 7 night cruise booked but it is possible that we may have to cancel the trip last minute because of work. I saw that Disney offers 75% booking towards a future cruise but is there insurance out there that will refund the whole cost of the cruise if we end up needing to cancel for work reasons? If Disney gives us a 75% credit, we still loose about $1000.

Yes, there is insurance that covers cancelling for work reasons. If you google, "cancel for work travel insurance" many options and articles pop up.
