I’m kinda thinking about trying to switch/extend our stay () so we could do this. I know it’s pretty new, but does anyone have an idea about how far in advance it may sell out?

Depends on the date. I'm going Jersey week, and looked at availability right after I heard about it, and it was already sold out. It still showed availability during surrounding weeks, though.

Are you going during dates that have already been announced? If so, book it. If it works to move your dates, you've got the EMM tickets. If it doesn't, you can cancel them.

I say book it, and then cancel if you can't go. But I wouldn't rearrange the trip, and then try to book. Much easier to cancel EMM, if necessary, than to deal with airlines, hotels, etc. only to discover you can't get tickets.
