We took DD when she was 2 yrs 10 months and again when she was 3. There really was not a ride that she did not like. We did not take her in Haunted Mansion, or obviously on anything that had a height restriction (other than Goofy's barnstormer which was was tall enough for). There are so many rides that little ones can go on in the parks. Her absolute favorites were Peter Pan, Small World, and the plain old Carousel in Fantasyland at MK and Aladdin's Magic Carpets at Adventureland at MK. Next, would be Toy Story Mania at DHS. That would be followed by the boat ride in Mexico at Epcot. Her favorite park other than MK, is definitely Epcot. In addition to the rides and just exploring there, the fact that the World Showcase is full of Princesses is a big hit with her. At 2 years 10 months, she did not like AK at all (we have a tram at our local zoo, and I don't think she got the distinction between that and Safari), but at 3 she liked it there. She is usually ready to leave DHS by mid- afternoon, so we probably spend the least amount of time there, but she loves shows, so at that park she loves The little Mermaid show, Beauty and the Beast Show and Muppet 3-D. She liked the beginning and the end of Fanstasmic, but the middle terrified her and she doesn't scare that easily (i.e. we had to ride Snow White's Scary Adventures about 4 times in a row). We were sitting too close- if you take little ones, I would sit towards the back where it is not so intense. If you have kids who won't sit through shows and you are looking for rides, you probably won't spend much time at all at DHS, but Toy Story Mania is definitely worth going for with the little ones. (We did not take her on the Great Movie Ride because of the Alien's movie part and the live gun fight part, which we did not think she would do well with)
