What is everyone’s Top 3 Universal restaurants?

Although there are many we like, our current favorites (limited to one in each park and one in City Walk) are:

(I also love Toothsome and Mythos, and both HP restaurants are great, each for different reasons. But I was trying to think, if money was no object, which restaurants would I pick. There are so many great restuarants, which one is best really depends on the situation at the time,and personal food preferences. This was a really hard question for me to answer.)

Croissant Moon - for breakfast (we get a croissant sandwich plate and share it.)
Margaritaville - love the atmosphere and their mountain of nachos (Watching the volcano blow beats out the pool views with the Bula nachos at Royal Pacific.)

what does the volcano mean? Is that a feature at the restaurant or part of the nachos? We might go here at the end of the month.

Some Margaritaville's have a big "mountain" with a drain into a hugh blender. Every time Jimmy Buffet's Volcano song plays, when it ends, the volcano "erupts" and it all drains into the hugh blender to make a huge margarita. Someone videoed it:
