Tonga Toast

I just tried the Tonga Toast recipe and although it was tasty! Although it was very messy to make I'd like to try it again. One problem I had was that the banana's kept falling out of the bread when I tried to fish it out of the oil (banana side down) any tricks I should know about for the next time?

Yeah, I tried it too. I didn't use as oil as the recipe calls for. I fried the banana side down first, then carefully flipped it over to finish cooking on the other side. Sometimes, the banana stayed put, sometimes it just won't stay!
