Im swimming in tomatoes!
I'm making salsa, sauce, soup, oven roasted, etc.
Looking for more ideas.
I will be freezing some for the winter too...

If you are going to Disneyland, slice them and bring them with you, if you want them added, they charge $1.00 per slice! (Most burgers do not include tomatoes)
 
When we had the inexpensive tomatoes here I roasted thm by the tray full and made them into a simple sauce that I can use for lots of things now that tomatoes are expensive again here.

What great looking tomatoes! We like to take smaller ones or the big ones sliced and drizzles with olive oil and cover with a thin layer of bread crumbs and bake as a side dish. Or we chopped them and add garlic and onions and saute them to put on fish or chicken.
 
Made this the other night from allrecipes.com & it's fast, easy & amazingly addicting! Basically made the sauce while waiting for the pasta to boil.

Calls for canned tomatoes (I used canned diced) but don't know why you couldn't use chopped fresh tomatoes. I had heavy cream to get rid of, but people reviewing said they used fat-free 1/2 & 1/2 with good results.

I know it sounds weird (italian sausage & cream???) but makes a very yummy tomato cream sauce with a bit of bite from the red pepper. Sauce is kinda thin, but the pasta absorbs it. Thinking of trying it with diced chicken or shrimp...

Bowties w/Sausage, Tomatoes & Cream

Ingredients

1 (12 ounce) package bow tie pasta
2 tablespoons olive oil (my note: didn't need it, enough fat in the sausage & drained any excess)
1 pound sweet Italian sausage, casings removed and crumbled
1/2 teaspoon red pepper flakes
1/2 cup diced onion
3 cloves garlic, minced
1 (28 ounce) can Italian-style plum tomatoes, drained and coarsely chopped
1 1/2 cups heavy cream
1/2 teaspoon salt
3 tablespoons minced fresh parsley

Directions

1.Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.

2.Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.

3.Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.
 
The same allrecipes site that was mentioned earlier has some great recipes for tomato pie. It makes a really nice brunch/lunch idea, but my husband also likes it for dinner. It is a good alternative to quiche, and a great way to use up tomatoes. I am jealous - we had a really bad crop this year. No pear coming either.:confused3
