tomatilla recipes anyone?

well the plants were marked wrong at the nursery so now i have 3 tomatilla plants inplace of 3 of my tomato plant:eek: since i've grown them before, i know you basically only need 1 plant for salsa. so anyone know of anything to do with them other than salsa or does anyone know if you can freeze or can salsa and have it taste like fresh or does it just taste like jarred salsa.

I know the green sauce used to pour over the Chilaquiles at last year's F&W festival used tomatillos. From the F&W festival cookbook:

Green sauce:
2 lbs tomatillos, outer skin removed
3 jalapeno peppers, seeded
1 cup water
3 TBS olive oil
1/3 cup onions, finely chop
3 garlic cloves, finely chop
1/3 cup cilantro, chopped
salt to taste.

Combine tomatillos, jalapeno and water in medium pan and bring liquid to a boil. Reduce heat and simmer for 10 mins or until tomatillos are tender. Set aside to cool.
Transfer cooled tomatillo mixture to a blender and process until pureed. Heat oil in saute pan, adding the onions, garlic and tomatillo puree. Saute 10 mins, stirring occasionally or until the moisture has evaporated. Add cilantro and salt to taste.

This was my favorite dish from F& W festival. Enjoy!
