The toll roads are all arterials, so while you're hanging aroud the WDW area, or shopping along US 192 or International Drive, or going up I-4 to Universal, you probably won't use the toll roads much, if at all.
You might use Osceola Parkway once in a while, as it is a usefull route when travelling to off-site hotels to the south of WDW, but the first toll isn't until 3 or 4 miles outside of WDW.
Keep about $3 worth of quarters in your car and you'll be fine.
Most of the toll booths on the main roads are manned so if you have dollar bills you will be fine. If you get off to go on another road for example you would need change. So bring some dollar bills and quarters and you will be fine.
There are two .75 tolls (passenger car) on the way to WDW and also on the way back to MCO. This is true whether you take the North route - Bee Line (528) or the South route - 417 expressway. They even have people called "toll collectors" that will make change and issue receipts if you don't have the correct change or a SunPass. Just watch the overhead signs and please use the correct toll lane.
Traffic is often lighter on teh toll roads in teh WDW area becuase locals seem to have some sort of phobia abotu driving on them. I've known locals who litterally drive 10-15 miles out of the way to avoid a single 50-cent toll!
