to park hop or not?

My family of five will be getting 6-day passes and we're considering the park hopper option for the first time (our last trips were in 2009 and 2011). We are two adults and three kids 9, 7, 2.

My wife's plan is to have a late dinner and then bring our two year old daughter back to the resort before 9pm. She is thinking that is when I can take my boys to another park if they choose (e.g. going from dinner at AK to EP for Soarin, Test Track, etc).

Would this work for us?

Another thing I have to figure in is height restrictions. What rides can I take my 9 year old on (54" tall) that I would not be able to take my 7 year old on (barely 48" tall)? Without my wife there, I would be limited to rides that they can only both go on. I know my older son loves the coasters at DHS.

Looking for any advice one way or another. Is it worth the $250+ to tack onto our 6-day ticket price?
 
We got park hoppers because we're going at a busy time of year (4/19-4/27, AKA the week of and after Easter). They hoppers will enable us to RD at parks that have morning EMH, then switch when that park gets too crowded and go to one of the easywdw recommended parks. Also so that we can go somewhere else after AK closes early.

This.^^^ We do the same during the slow times, too.
 
It may depend on when you're going. Except for summer and holiday weeks, most of the parks close around 9:00 or 10:00. Late EMH would give you more time, but you don't have those every night.

In response to the height question, you can filter rides by physical restriction on Disney's site to see what would be available for all three of you. It will also be noted on the park map. With a little planning, you could ride the "bigger" rides with your eldest while your wife is with you and save the "smaller" rides for when it's just the three of you.
 
I plan to have my fp+ picks for the afternoon so we can do rope drop in the morning in one park and hop to another to have dinner at epcot :)
 
Since we're not visiting any of the water parks it seems by 7 year old can hit every ride in the four major parks. Problem solved. Will probably be hopping this year.
 
We always buy park hoppers. Makes the days so much more flexible that way.
