Oh Tkyes..... would you please share the recipe for your caramels?

DH is a caramel finatic and I know he would love these!!!

LOL! I was just about to post this. :)


Caramels -

makes 9 x 9 pan

1 Cup Butter
2 1/2 C. dark brown sugar
1/8 t. salt
1 C. light corn syrup
1 14 oz. can sweetened condensed milk
1 t. vanilla

melt butter in large pot
stir in sugar and salt
add syrup, mix well
add milk, stir constantly
cook to 245 degrees, stirring constantly
remove from heat
add vanilla

pour into 9" buttered pan
cut when cool - a few hours

I double this recipe and pour it into a 9 x 13 pan.

I just cut them with a knife into small pieces and wrap with wax paper. You really need to wrap them. The caramels are very soft and will "melt" back into one another if you don't wrap them.
 
Oh - I posted on another thread that I was making turtles this weekend as well. I just used this caramel recipe on top of pecans and then melted semi sweet chocolate to pour on top when the caramel was cool.

I don't know if this caramel is the best for turtles - I think I need to experiment.

I could only make 30 turtles before my caramel thickened too much. Trying to heat it back up didn't work too well. They taste good, but I was dissapointed that I couldn't make more.

I did find a recipe on Food network. com for turtles - maybe sometime I'll have to try that one.

I was just thinking of making carmels and I am glad to hear some one else does. I actually found a recipe in my grandmother cookbook (dated 1940) and I think it is the same one. Guess I will have to get to work now. I am glad you posted how to wrap them. Wasn't sure what to do.
 
Tykes~ Just wanted to let you know I made these tonight and they were awesome. Have you ever poured chocolate over these ? I made homemade caramel last year and it did not turn out~ this recipe was easy and fantastic. Thank you so much. Now I want to make turtles with these. Have you ever microwaved these and poured over nuts? would that work??? I am so hungry now.:tongue:

Whirlsy - I've never experimented with the caramels, besides my turtle experiment this past weekend. I did try and reheat my caramel when it was thickening up, it didn't work.

Let me know if you experiment and create a new recipe! :)

Ok now I am way too excited~ I just made chocolate covered turtles with this recipe and they are awesome~ IF I do say so myself:hyper: I let the caramel cool over night in one big chunk and then I microwaved part of the caramel in one minute intervals and it melted great. poured over the nuts added chocolate and my neighbors are getting different kinds of sweets this Christmas. That's great Whirlsy! I might have to try that method next year. It sounds easier than my "do it quickly before the caramel hardens" method. ;)

Tkyes~ have you ever made this with light brown sugar? I am all out of the D.brown sugar and didnt feel like going to the store again:rolleyes: Just wondering what the difference is. Thanks
 
I made them with light brown sugar and they turned out
yummy!
My mom says they will rival Mrs. Sees(for you West coasters out there) any way...I thought mine were a bit buttery so I would probably cut down on the butter a bit just because we have so much humidity here...but they sure taste YUMMY!!!!!!!!

I made these on Christmas Eve - my aunts loved them so much the next day that they were eating them BEFORE our big Christmas turkey dinner.

trying keeping the caramel over hot water in double boiler to keep it soft while making the turtles.
 
I have been down with a herniated disk and I had to do After Christmas cookies this year rather than Christmas cookies.

I made your caramel recipe today and it is FANTASTIC!!!!! I am in Caramel Heaven! One big problem I found, I let my two DD's have a few pieces after school today and they were like superballs after that in the house. Sugar-buzz!!!! Anyway, thanks!!!!!!
