In answer to your question, for the Breakfast which is pre-plated I tip 15%. My reasoning - it is not a buffet at which you would load and carry your own plate nor is it a full service restuarant breakfast (such as at a diner where they would take your order and prepare part of the breakfast. i.e., toast, juice) so taking all of that into consideration I believe 15% is fair. Of course should there be some circumstance occur which would sway me in another direction I would adjust accordingly - for horrible service - i.e. being ignored I would lower accordingly and for incredibly attentive service I would raise the tip accordingly.
