time for booking port adventures

My date is fast approaching but I'm unsure what time it opens, is it midnight? And what time zone please.

It opens up midnight eastern time. So if you're in the pacific time zone, you can start booking at 9:00 PM.

Another question about booking Port Adventures - when can you see the list of what’s actually available for your particular cruise? Can you see it after you PIF, or not until booking date?

Unfortunately, you can't see the exact excursions available on your cruise until your booking window opens.

If you are sailing with or in a Cruise Meet group with someone sailing Concierge or with a higher Castaway status, you could ask them to let you know what's available when their booking window opens. That's the only way to know for sure.

It is also possible for activities to open up after the initial bookings begin, so if there's something you want but don't see, you can keep checking. My husband and I found late evening alcohol tastings that weren't listed when we first booked but were available a few days later.

Bringing this thread back up to ask another question, as I get closer to our booking date. If you book a DCL adventure, when do you pay for it? At time of booking, at embarkation, or on the day of the excursion? Does it go on your onboard account for payment at end of cruise? TIA!

It goes onto your onboard account on day 1. I think there are certain points they will put the charge thru, but we went to guest services on day 1 to apply our Disney rewards $ to our account and it covered all our expenses... actually got $400 put back on the card due to a cancelled excursion.
 
Shore excursions go onto your onboard account on embarkation day. When they are actually charged to your payment method on file depends on what other charges you have. When my account reaches a certain level on my recent Dream cruise (I think it was $1000 but I'm not sure) my credit card was charged, and then charged again at the end of the cruise.
