They don't care how you use them, as long as they are used within the 14-day window. Otherwise, a 7-day ticket would expire 7 days from the date of first use, know what I mean.
From the time a ticket first gets put into a turnstile, it has a maximum lifespan of 14 days. If you paid for 7 park days, you may enter a park on any 7 of those 14 days. The first seven, only the even days, only the odd days, only the days you feel like it, etc.
NOTE: Not to confuse things, but let's say you didn't buy the park hopper option. Non-hopper tickets can only be used in one theme park per day. Many people have asked if they can go to Magic Kingdom in the morning, and then that night go to Epcot, in an attempt to use "2 days" of the ticket in a single day. With a non-hopper ticket, the answer is NO, that can't be done. The computer will deny you access to the second park on that day.
Of course, you can go in and out of the SAME park in a day, you just can't "hop" from park-to-park without the park hopper option.
