Ticket Question

We have 7 Day Park Hoppers but we might only make it to the parks for 6 days. Would I be able to make the last day non-expiring before we leave? Where would I do it? Can I do that at my resort?

Yes, you can make the last day non expiry before you leave (as long as it is within 14 days of the first use of the ticket). The Lobby Concierge at the front desk of the hotel and/or guest relations at the parks can make that adjustment for you, just keep in mind that you will be paying the rate for a 7 day non expiring ticket not a 1 day, it is based on the amount of days on the original ticket, not the amount of days left...
 
It is not worth it to make just the seventh day non-expiring, added cost about $95.

It might be worthwhile to add (the maximum of) three more days ($5.) and perhaps water park fun ($55.) as well as non-expiration ($165. for what became a ten-day pass), provided that some future vacation can make use of that ticket only. (Universal or Sea World on the fifth or sixth day then?)
