We are doing a land & sea vacation in July and we were going to try and spend an extra day and go to Universal Studios or Islands of Adventure. I was wondering if you could get a one day pass and be able to go to both parks the same day or do you have to buy a multi-day pass to be able to park hop?

You can buy a one day 2 park pass at the gates.
 
You can buy a one day two park pass at the gate. I think it is about $75.

What my sister did when she came along with us, was to buy one day passes to UO (we got her a discount using our AP). The thought was that we would upgrade her tickets to a two park pass if there was enough time after seeing all they wanted to see at UO. Since her 5 year old had a "bad start" that morning, and the parks closed at 7, we ended up not having time to go to IOA. They were glad they did not buy the 2 park tickets for just one day.

You can save time by buying tickets from the concierge at your hotel. You can definately do this at the on sites, and at several of the surrounding hotels as well.
