Hi! Fellow thunderstorm-phobic, here so I do understand where you are coming from!
First, let me say, I have not ever traveled to Florida and *not* seen a thunderstorm. Mid-August seemed to be the worst time in my experience.
The good news--they are almost always VERY short. In fact, I've gone in a ride when it was sunny and dry, and come out to find everything wet--a storm had come and gone in the time it takes to ride one ride!
It also doesn't storm late at night, from my experience, which is the scariest time for me, personally. If you are in the parks when one comes up (and you'll know it's coming, you'll see the clouds), find a nice, large ride building and you won't even hear it. It will pass so quick you'll miss it. Late afternoon seems to be a common time.
I know it's impossible to tell you not to worry about it, I know how these phobias go. If you could control it, you wouldn't have it at all, right? You need to find some coping mechanisms. I'd hate to see you miss out on a trip of a lifetime for this.
One thing I do with the pre- anxiety is procrastinate it. (seriously). If I find myself starting to worry, I recognize it, but decide I'll worry about that tomorrow. I keep doing that until I'm there and just have to deal with it.
Breathing exercising, visualization exercises might work, too. Maybe even a doctor is in order here, though I've been too much of whimp about it myself to see one.
And on a final note, for what it's worth, for some reason I find storms in Disney less scary. It's like a magical place where the storms can't hurt me. Naive, I know, but it gets me through.
