Thoughts on arrival night......

we plan on hitting MK when we arrive and then walking over to Chef Mickey's for a 6:25 dinner. What do we do after dinner? Is there a way we can see the fireworks? I believe MK closes at 9pm that evening.

You could watch them from outside the contemporary, walk back to MK, view it from TTC

As CAS239 said, you can watch them from the 4th floor observation deck at CR, but you will probably be done with dinner by 8:00 pm, so you would have some time to kill if you do that. You could take the monorail to Poly and watch from the beach or GF and watch from the boat dock or marina. Or, simply walk back to MK and watch from inside the park.

When we eat dinner at Chef Mickey's we head back to MK after we are done and just look through the gift shops and then find a good spot to watch the fireworks.

With a 6:25 resso for a character meal, I'd budget closer to 2 hours for that, especially peak dinner time. Your best options are to watch from the Contemporary, or monorail to the TTC/Poly to catch them from there, I wouldn't want to deal with the hassle of getting back into MK at that time, but that's just me.

Recently they've been doing the fireworks an hour before close so id plan on watching them from the contemporary

I would expect you should be able to get back to MK by about 8:00 so I would probably do that, maybe even squeeze in a FP. You can always just play it by ear and if your dinner runs long and it's not looking like you can get back to MK much before the fireworks are set to start, then I would probably just hang out at CR and watch them from the 4th floor observation area.
